Zillions

I have completed all of the Akahal desert that's toward the beginning of the game. . . after the phoenix drops you. . . except for killing the zillions in the cave at the start of this section. It's not a fair fight, since they get first hit and wipe out the entire party one by one with one blow.

Is it doable this early in the game? The walkthrough talks as though it is. Any tips?

Yeah, it is technically winnable. I'm not sure there is a specific strategy other than being very high level (40+ maybe even) and getting lucky on turn order. Theoretically a high enough level will let you survive two hits, and makes you more likely to act first in battle.

You can stack up status effect boosts prior to the first round of bats at least, but most (all?) of those will wear off before the second round. You can try spamming the menu button after the first combat in case there is a small time window to open the menu before round 2 maybe?

Zillion wings only give +1 speed each, so it's not that big a deal if you just leave them alone.
