where is the shop - most of the shops are closed and I cannot find where to look - thanks

it seems you're still in the ruins. the monastery per se is beyond those ruins.

Is there anywhere to buy supplies? I went into the monastery shop but the monk never gives me the option to buy anything. I have Viktor and I've completed the rat quest.

There are 2 shops. One very near the entrance where you can buy weapons, and the second one (the one who gives you the rat quest) which sells items and armour. You have to speak to them from the front, not from the side, if you want to buy anything.
