About promotion:
Can I never change or get new promotions if I choose one in this episode?

I got 7 growth egg but what do they do? I can't figure that out because nothing change in the status menu.
About promotion:

The growth eggs raise your experience points.
I don't know about the promotions. There may be options to change or upgrade in the next episode.

I think I just do the promotion so I can kill all the animal kings in hard mode.

i was thinking the promotion will kind of give you a title since Marine's is peasant maybe she will be promoted to wizard or something.

It does change your title but we don't know if you will be able to change classes or get extra promotions in the next episode or not.
