Easy vs Hard mode

Hi all, I am almost finished with my first game (easy mode) and am wondering, after reading all the wonder comments and help on here, if there is any difference between the modes other than just the strength of the enemies and the number of Animal kings you need to kill? Are there any additional quests?

Also my journal says I have completed 25 out of 35. I can't complete the cracked mirror quest because I tried to crack it wearing the patience cloak/coat and now I can't do it. Nor did I get to the forge to get the key. I've been keeping track of the quests and watching here and I am confused about there being 35?

There are 35 quests in easy mode, 38 in normal mode and 40 in hard mode! These reflect the number of Animal Kings you can slain. 4, 6 or 8 and the fact that once in normal mode you can complete Florian's quest, since he asks you to slain 6 of them.
