It was never fully explained why Jordan could talk to animals, that is because of the demon inside him?

it is strongly hinted at when the animals mention at the end that jordan can no longer undertand 'em +::O_o

Since we're talking about the endings ... it would be great if the autosave still did its job after defeating Cassandra. If you want to try out the different endings when asking different girls if they want to go out you have to replay the fight with Cassandra.

But some choices throughout the game affects in the endings too right? I'm not talking only about the Jasmine/Melusine choice though.

Yes, I do think so.
No matter which choices I made, I wanted to see what happens when I choose either of the girls and had to fight Cassandra anew for every ending.
